Every day throughout Italy thousands of Japanese restaurants open their doors to crowds of customers. When it comes to Japanese food, therefore, everyone thinks only of sushi, unfailingly divided between extra-luxury restaurants or tourist all-you-can-eat. But there is a place in Florence where Japanese cuisine regains its authenticity.
